Ingredients

  • 200 g Paneer
  • 100G Cashews
  • 500 ml Water
  • 1 kg Basmati Rice
  • 500 g Moong Dal
  • 500 g Methi
  • 500 g Ghee
  • 250g Green Chilli
  • 250g Ginger
  • 20 g Turmeric Powder
  • 100 g Coriander Powder
  • 10G Salt
  • 250g Coriander

Instructions

  1. Step 1: Heat 1 tablespoon of ghee in a pressure cooker. Add cumin seeds and let them splutter.
  2. Step 2: Add slit green chilies and grated ginger. Sauté for 1 minute until aromatic.
  3. Step 3: Add the washed rice and moong dal. Stir gently for 2-3 minutes to coat them in the ghee and spices.
  4. Step 4: Add the chopped methi leaves, turmeric powder, coriander powder, and salt. Mix well.
  5. Step 5: Pour in 3 cups of water and close the pressure cooker. Cook for 3-4 whistles on medium heat. Allow the pressure to release naturally.
  6. Step 6: In a separate pan, heat the remaining 1 tablespoon of ghee. Lightly sauté the paneer cubes until golden on the edges. Set aside.
  7. Step 7: Once the pressure has released, open the cooker and fluff the khichdi gently. Stir in the sautéed paneer cubes and roasted cashews.
  8. Step 8: Garnish with fresh coriander leaves and serve hot with a bowl of curd or a glass of buttermilk.
