A hearty, nutrient-rich khichdi made with paneer, methi (fenugreek), and aromatic spices, tailored for Jain dietary preferences and perfect for weight gain.
Ingredients
- 200 g Paneer
- 100G Cashews
- 500 ml Water
- 1 kg Basmati Rice
- 500 g Moong Dal
- 500 g Methi
- 500 g Ghee
- 250g Green Chilli
- 250g Ginger
- 20 g Turmeric Powder
- 100 g Coriander Powder
- 10G Salt
- 250g Coriander
Instructions
- Step 1: Heat 1 tablespoon of ghee in a pressure cooker. Add cumin seeds and let them splutter.
- Step 2: Add slit green chilies and grated ginger. Sauté for 1 minute until aromatic.
- Step 3: Add the washed rice and moong dal. Stir gently for 2-3 minutes to coat them in the ghee and spices.
- Step 4: Add the chopped methi leaves, turmeric powder, coriander powder, and salt. Mix well.
- Step 5: Pour in 3 cups of water and close the pressure cooker. Cook for 3-4 whistles on medium heat. Allow the pressure to release naturally.
- Step 6: In a separate pan, heat the remaining 1 tablespoon of ghee. Lightly sauté the paneer cubes until golden on the edges. Set aside.
- Step 7: Once the pressure has released, open the cooker and fluff the khichdi gently. Stir in the sautéed paneer cubes and roasted cashews.
- Step 8: Garnish with fresh coriander leaves and serve hot with a bowl of curd or a glass of buttermilk.
