Ingredients
- 500 Grms Bajra Atta Millets Atta 500 Grms
- 500 g Urad Dal
- 100 g Coriander Leaves
- loose Ginger
- 1 box Baking Soda
- 200 g Dahi
- 200 ml Mustard Oil
- - Chilli Green 100 G
- 100 g Curry Leaves
- 100 g Salt
- 20 g Turmeric Powder
- 100 g Yellow Mustard Seeds
Instructions
- 1. Rinse the foxtail millet and urad dal separately, then soak them in water for 4-6 hours.
- 2. Drain and grind the millet and urad dal into a smooth batter, adding a little water as needed. Let the batter rest for 6-8 hours or overnight to ferment.
- 3. Chop the coriander leaves finely, and blend the green chilies and ginger into a paste.
- 4. Mix the coriander leaves, chili-ginger paste, turmeric powder, yogurt, and salt into the fermented batter. Stir well and add baking soda just before steaming.
- 5. Grease idli molds with oil and pour the batter into each cavity. Steam the idlis for 12-15 minutes in an idli cooker or a steamer until cooked and fluffy.
- 6. In a small pan, heat 1 tbsp oil and add mustard seeds and curry leaves. Allow them to splutter, then drizzle over the steamed idlis for added flavor.
- 7. Serve the fluffy coriander millet idlis warm with coconut chutney or tomato chutney.
