Ingredients
- 250 ml Coconut Milk
- - Mustard Seeds
- 200 g Fenugreek Seeds
- 500 ml Water
- 20 g Turmeric Powder
- 250g Green Chilli
- 20G Curry Leaves
- - Onion
- 250g Ginger
- 250g Garlic
- - Foxtail Millet Flour
- 500 Gms Rice Flour
- 10G Salt
Instructions
- Step 1: Prepare the dosa batter by mixing foxtail millet flour, rice flour, a pinch of salt, and enough water to make a smooth, pourable consistency. Set aside for 20 minutes.
- Step 2: Heat 1 tablespoon of oil in a pan. Add mustard seeds and fenugreek seeds. Once they splutter, add curry leaves, green chilies, sliced onion, grated ginger, and minced garlic. Sauté until the onion turns translucent.
- Step 3: Add turmeric powder and chopped tomato. Cook until the tomato is softened and the mixture is fragrant.
- Step 4: Pour in the coconut milk and bring to a gentle simmer. Adjust salt as needed.
- Step 5: Carefully add the fish fillets. Cover and cook for 10-12 minutes on low heat, until the fish is tender and cooked through.
- Step 6: Heat a skillet or dosa tawa. Grease lightly with oil. Pour the millet dosa batter thinly in a circular motion to make dosa. Cook until crisp on one side, then flip and cook for another 1-2 minutes.
- Step 7: Serve the fish moilee hot, paired with crispy millet dosa.
