Ingredients
- 100G Cashews
- 100G Raisins
- 20 g Chicken Stock
- 500 ml Water
- Pcs Chings Masala Chicken Chilli
- 500 g Ghee
- 250g Garlic
- 250g Coriander
- 20 g Turmeric Powder
- 50 g Cumin Powder
- 55 g Paprika Powder
- 100g Garam Masala
- 50 g Black Pepper
- 10G Salt
- 100 g Lemon
Instructions
- Step 1: Heat 1 tablespoon of ghee in a large sauté pan over medium heat. Add onions and garlic, and cook until golden.
- Step 2: Add chicken pieces to the pan, season with turmeric powder, cumin powder, paprika, garam masala, black pepper, and salt. Sauté for 5-7 minutes until chicken is lightly browned.
- Step 3: Blend soaked cashews with 100 ml of water to create a creamy paste, and stir it into the chicken mixture.
- Step 4: Add chopped tomatoes, and cook until softened and the mixture becomes rich and aromatic.
- Step 5: In a separate pan, heat 1 tablespoon of ghee. Toast the pearl couscous for 2-3 minutes until lightly golden.
- Step 6: Combine the toasted couscous with the chicken mixture, and pour in the chicken stock. Add raisins if using.
- Step 7: Cover and let simmer on low heat for 15-20 minutes until the couscous is tender and has absorbed the flavors.
- Step 8: Garnish with fresh coriander leaves and serve with lemon wedges.
