Ingredients

  • 250g Garlic
  • 250g Ginger
  • 250g Green Chilli
  • 100 g Quinoa
  • Pcs Epi Yogurt Mango
  • - Onion
  • 250g Coriander
  • 200 ml Sesame Oil
  • 500 g Tomato - Hybrid
  • 200 g Nandus Mutton Mince
  • 20 g Turmeric Powder
  • 100 g Coriander Powder
  • 10G Salt
  • - Cumin Seed
  • 1 l Soyabean Oil
  • - Refined Groundnut Oil-1 Ltr

Instructions

  1. Step 1: In a bowl, mix ground mutton with garlic, ginger, green chili, red chili powder, turmeric powder, coriander powder, cumin seeds, and salt. Form the mixture into small kofta balls.
  2. Step 2: Preheat the air fryer to 180°C (350°F). Lightly coat the koftas with vegetable oil and air-fry them for 15-18 minutes, shaking the basket halfway through.
  3. Step 3: While the koftas are cooking, heat a saucepan. Add a teaspoon of oil and sauté the chopped onion until golden.
  4. Step 4: Add the chopped tomato and cook until soft. Stir in yogurt, turmeric, and a pinch of salt. Cook for an additional 2 minutes.
  5. Step 5: Add rinsed quinoa to the saucepan. Pour 300ml of water, cover, and cook on low heat for 12-15 minutes or until quinoa is fluffy and water is absorbed. Garnish with chopped coriander leaves.
  6. Step 6: Serve the air-fried mutton koftas on a bed of spiced quinoa and enjoy!
