Ingredients
- 250g Garlic
- 250g Ginger
- 250g Green Chilli
- 100 g Quinoa
- Pcs Epi Yogurt Mango
- - Onion
- 250g Coriander
- 200 ml Sesame Oil
- 500 g Tomato - Hybrid
- 200 g Nandus Mutton Mince
- 20 g Turmeric Powder
- 100 g Coriander Powder
- 10G Salt
- - Cumin Seed
- 1 l Soyabean Oil
- - Refined Groundnut Oil-1 Ltr
Instructions
- Step 1: In a bowl, mix ground mutton with garlic, ginger, green chili, red chili powder, turmeric powder, coriander powder, cumin seeds, and salt. Form the mixture into small kofta balls.
- Step 2: Preheat the air fryer to 180°C (350°F). Lightly coat the koftas with vegetable oil and air-fry them for 15-18 minutes, shaking the basket halfway through.
- Step 3: While the koftas are cooking, heat a saucepan. Add a teaspoon of oil and sauté the chopped onion until golden.
- Step 4: Add the chopped tomato and cook until soft. Stir in yogurt, turmeric, and a pinch of salt. Cook for an additional 2 minutes.
- Step 5: Add rinsed quinoa to the saucepan. Pour 300ml of water, cover, and cook on low heat for 12-15 minutes or until quinoa is fluffy and water is absorbed. Garnish with chopped coriander leaves.
- Step 6: Serve the air-fried mutton koftas on a bed of spiced quinoa and enjoy!
