Ingredients
- 100 g Quinoa
- 1 liter Sunflower Oil
- 50 g Asafoetida Powder
- 500 g Tomato - Hybrid
- 100 g Coriander Leaves
- 100 g Salt
- 500 g Capsicum Green
- 100 g Curry Leaves
- 50g Everest Garam Masala
- 50G Green Chilies
- 100 g Jeera
- 250 ml Lemon Juice Concentrate
- 100 g Red Chili Powder
- 20 g Turmeric Powder
- 100 g Yellow Mustard Seeds
Instructions
- 1. Rinse the quinoa thoroughly under cold water and set aside to drain.
- 2. Heat the vegetable oil in a pan over medium heat. Add the mustard seeds and cumin seeds, and let them splutter.
- 3. Add the asafoetida, chopped green chilies, and curry leaves. Sauté for about 30 seconds until fragrant.
- 4. Stir in the chopped tomato and green bell pepper. Cook for 3-4 minutes until the vegetables soften.
- 5. Add the turmeric powder, red chili powder, and garam masala. Mix well and cook for another minute.
- 6. Add the rinsed quinoa to the pan and stir well to coat it with the spice mixture.
- 7. Pour in enough water to cook the quinoa (usually a 2:1 water-to-quinoa ratio). Add salt to taste, bring to a boil, then reduce the heat, cover, and simmer for 15-20 minutes until the quinoa is cooked and fluffy.
- 8. Once cooked, turn off the heat, add lemon juice, and gently fluff the quinoa with a fork.
- 9. Garnish with fresh coriander leaves before serving.
