Ingredients

  • 100 g Quinoa
  • 1 liter Sunflower Oil
  • 50 g Asafoetida Powder
  • 500 g Tomato - Hybrid
  • 100 g Coriander Leaves
  • 100 g Salt
  • 500 g Capsicum Green
  • 100 g Curry Leaves
  • 50g Everest Garam Masala
  • 50G Green Chilies
  • 100 g Jeera
  • 250 ml Lemon Juice Concentrate
  • 100 g Red Chili Powder
  • 20 g Turmeric Powder
  • 100 g Yellow Mustard Seeds

Instructions

  1. 1. Rinse the quinoa thoroughly under cold water and set aside to drain.
  2. 2. Heat the vegetable oil in a pan over medium heat. Add the mustard seeds and cumin seeds, and let them splutter.
  3. 3. Add the asafoetida, chopped green chilies, and curry leaves. Sauté for about 30 seconds until fragrant.
  4. 4. Stir in the chopped tomato and green bell pepper. Cook for 3-4 minutes until the vegetables soften.
  5. 5. Add the turmeric powder, red chili powder, and garam masala. Mix well and cook for another minute.
  6. 6. Add the rinsed quinoa to the pan and stir well to coat it with the spice mixture.
  7. 7. Pour in enough water to cook the quinoa (usually a 2:1 water-to-quinoa ratio). Add salt to taste, bring to a boil, then reduce the heat, cover, and simmer for 15-20 minutes until the quinoa is cooked and fluffy.
  8. 8. Once cooked, turn off the heat, add lemon juice, and gently fluff the quinoa with a fork.
  9. 9. Garnish with fresh coriander leaves before serving.
