Vegetable Masala Khichdi (Jain Style) recipe

Ingredients

  • 100 G Asafoetida / Hing 100 G
  • 500 ml Water
  • 1 kg Basmati Rice
  • 500 g Ghee
  • 250g Green Chilli
  • 250g Ginger
  • 200 g Green Peas
  • 500g French Beans
  • 20 g Turmeric Powder
  • - Red Chilli
  • 100 g Coriander Powder
  • 10G Salt
  • 250g Coriander

Instructions

  1. Step 1: Heat ghee in a large pressure cooker over medium heat. Add cumin seeds and asafoetida, allowing them to sizzle for a few seconds.
  2. Step 2: Add grated ginger and slit green chilies. Sauté for about a minute until fragrant.
  3. Step 3: Add diced carrots, green peas, and chopped French beans. Stir well and cook for 2 minutes.
  4. Step 4: Add turmeric powder, red chili powder, coriander powder, and salt. Mix thoroughly.
  5. Step 5: Add soaked rice and moong dal to the cooker. Stir gently to combine with the spices and vegetables.
  6. Step 6: Pour in 3 cups of water and give it a final stir. Close the pressure cooker lid and cook on medium heat for 3-4 whistles.
  7. Step 7: Allow the pressure to release naturally. Open the lid and fluff the khichdi gently.
  8. Step 8: Garnish with freshly chopped coriander leaves before serving.
