A wholesome and flavorful Jain-style masala khichdi made with aromatic spices, lentils, rice, and fresh seasonal vegetables, perfect for dinner.
Ingredients
- 100 G Asafoetida / Hing 100 G
- 500 ml Water
- 1 kg Basmati Rice
- 500 g Ghee
- 250g Green Chilli
- 250g Ginger
- 200 g Green Peas
- 500g French Beans
- 20 g Turmeric Powder
- - Red Chilli
- 100 g Coriander Powder
- 10G Salt
- 250g Coriander
Instructions
- Step 1: Heat ghee in a large pressure cooker over medium heat. Add cumin seeds and asafoetida, allowing them to sizzle for a few seconds.
- Step 2: Add grated ginger and slit green chilies. Sauté for about a minute until fragrant.
- Step 3: Add diced carrots, green peas, and chopped French beans. Stir well and cook for 2 minutes.
- Step 4: Add turmeric powder, red chili powder, coriander powder, and salt. Mix thoroughly.
- Step 5: Add soaked rice and moong dal to the cooker. Stir gently to combine with the spices and vegetables.
- Step 6: Pour in 3 cups of water and give it a final stir. Close the pressure cooker lid and cook on medium heat for 3-4 whistles.
- Step 7: Allow the pressure to release naturally. Open the lid and fluff the khichdi gently.
- Step 8: Garnish with freshly chopped coriander leaves before serving.
