A traditional Karnataka-style one-pot rice and lentil dish infused with aromatic spices, served with a refreshing coconut-free tambuli made with vegan yogurt.
Ingredients
- 20G Curry Leaves
- 100 g Tamarind
- 500 g Jaggery
- 500 g Toor Dal
- 250g Coriander
- 250g Green Chilli
- 500g Cucumber
- 1 kg Rice
- - Mustard Seeds
- 500 ml Water
- 20 g Turmeric Powder
- 10G Salt
- - Cumin Seed
- 1 l Soyabean Oil
Instructions
- Step 1: In a rice cooker, combine the washed rice, soaked toor dal, turmeric powder, and 600 ml of water. Cook until soft.
- Step 2: Heat 2 tbsp of cooking oil in a pan. Add mustard seeds and let them splutter. Then add curry leaves, hing, and chopped onions. Sauté until the onions are golden.
- Step 3: Add the tomatoes, drumsticks, carrots, and green beans to the pan. Sauté for 5 minutes, then add 200 ml of water. Cover and cook until the vegetables are tender.
- Step 4: Stir in the tamarind pulp, bisi bele bath powder, jaggery, and salt. Cook the mixture on medium heat for 5 minutes.
- Step 5: Add the cooked rice and dal mixture to the pan. Mix well to combine. Simmer for 10 minutes, adding water for desired consistency. Garnish with coriander leaves.
- Step 6: Prepare the tambuli by whisking the vegan yogurt with grated cucumber, green chilies, cumin seeds, and salt. Mix well.
- Step 7: Serve the hot bisi bele bath with a side of chilled tambuli.
