  • 100 g Quinoa
  • 500 g Tomato - Hybrid
  • 500 g Capsicum Green
  • 1 pc (approx. 500 g to 800 g) Cabbage
  • 100 g Coriander Leaves
  • 100 g Jeera
  • 20 g Turmeric Powder
  • 100 g Red Chili Powder
  • 50 g Asafoetida Powder
  • 200 ml Mustard Oil
  • 250 ml Lemon Juice Concentrate
  • 100 g Salt
  • 100 g Til
  • 50g Everest Garam Masala

Instructions

  1. 1. Wash the quinoa thoroughly and cook it in a pot or rice cooker according to package instructions until fluffy. Set aside to cool slightly.
  2. 2. In a mixing bowl, combine paneer cubes with turmeric powder, red chili powder, garam masala, and a pinch of salt. Toss well to coat the paneer evenly in the spices.
  3. 3. Heat mustard oil in a pan over medium heat. Add cumin seeds and hing, allowing them to sizzle and release their aroma. Add the marinated paneer and sauté for 5-7 minutes until golden and slightly crisp. Remove from heat.
  4. 4. In a large bowl, combine cooked quinoa, diced tomato, bell pepper, shredded cabbage, and chopped coriander leaves. Mix gently to combine.
  5. 5. Prepare the dressing by whisking together lemon juice, a pinch of salt, and roasted sesame seeds. Drizzle the dressing over the quinoa and vegetables.
  6. 6. Add the sautéed paneer to the quinoa mixture and toss lightly to combine all ingredients. Adjust seasoning with additional salt or lemon juice if needed.
  7. 7. Serve the Spicy Masala Paneer Quinoa Bowl warm or at room temperature, garnished with extra coriander leaves and sesame seeds for a fresh and nutty finish.
