- 250 ml Lemon Juice Concentrate
- 500 g Capsicum Green
- 100 g Coriander Leaves
- - Green Peas
- 100 g Salt
- 20 g Turmeric Powder
Instructions
- 1. Heat a dry pan over medium heat and roast the semolina for 3-4 minutes until lightly golden and aromatic. Transfer to a plate and set aside.
- 2. In the same pan, heat the oil over medium heat. Add mustard seeds and let them splutter, followed by cumin seeds, curry leaves, and chopped green chilies. Sauté for 1 minute.
- 3. Add the asafoetida, turmeric powder, and chopped tomatoes. Stir and cook for 2-3 minutes until the tomatoes soften.
- 4. Add the chopped capsicum, cabbage, and green peas to the pan. Sauté for 4-5 minutes until the vegetables are tender but still have a bite.
- 5. Gradually add the roasted semolina to the pan, stirring continuously to mix well with the vegetables.
- 6. Stir in 2 cups of hot water to the mixture and add salt to taste. Cook on low heat, stirring occasionally, until the semolina absorbs the water and reaches a soft, fluffy consistency.
