- 200 g Paneer
- 100 g Quinoa
- 200 ml Ghee
- 500 g Onion
- 500 g Capsicum Green
- 200 g Dahi
- 100 g Lemon
- 100 g Coriander Leaves
- - Coriander Powder
- 50g Everest Garam Masala
- 100 g Jeera
- 100 g Red Chili Powder
- 100 g Salt
- 500 g Tomato - Hybrid
- 20 g Turmeric Powder
Instructions
- 1. Rinse the quinoa thoroughly and cook it in a pot with 2 cups of water until tender and fluffy, about 15 minutes. Set aside.
- 2. Heat ghee in a large pan over medium heat. Add cumin seeds and let them sizzle for 30 seconds.
- 3. Add the chopped onion and sauté until golden brown. Stir in the turmeric powder, red chili powder, coriander powder, and garam masala, cooking for 1 minute.
- 4. Add the diced bell peppers and tomatoes. Cook for 4-5 minutes until the vegetables are soft but still slightly crisp. Add salt to taste.
- 5. Gently add the paneer cubes to the pan and cook for 3-4 minutes, allowing them to absorb the spices.
- 6. Fluff the cooked quinoa and mix it into the pan with the vegetables and paneer. Cook for 2-3 minutes to combine flavors.
- 7. Turn off the heat and squeeze lemon juice over the dish. Garnish with fresh cilantro.
- 8. Serve warm in bowls and top each serving with a dollop of plain yogurt for a creamy finish.
