Ingredients

  • 1 kg Yellow Moong Dal
  • - Besan
  • 50G Green Chilies
  • 100 g Hing Khoda
  • 20 g Turmeric Powder
  • 100 g Jeera
  • - Coriander Powder
  • 100 g Red Chili Powder
  • 100 g Coriander Leaves
  • 250 ml Lemon Juice Concentrate
  • 100 g Salt
  • 200 ml Mustard Oil

Instructions

  1. 1. Wash the moong dal thoroughly and soak it in water for 2 hours, then drain it completely.
  2. 2. Grind the soaked moong dal into a coarse paste without adding water, ensuring a thick and grainy texture.
  3. 3. In a mixing bowl, combine the moong dal paste, besan, chopped green chilies, hing, turmeric powder, cumin seeds, coriander powder, red chili powder, chopped coriander leaves, lemon juice, and salt. Mix until well incorporated.
  4. 4. Heat oil in a shallow frying pan over medium heat. Shape the mixture into small, bite-sized rounds or patties with your hands.
  5. 5. Fry the bites in batches, ensuring they are golden brown and crispy on both sides, about 3-4 minutes per side.
  6. 6. Remove the bites from the oil and drain on a paper towel to remove excess oil.
  7. 7. Serve hot with a side of tangy mint or tamarind chutney, or enjoy them on their own as a protein-packed snack.
