Spiced Lamb and Bulgur Pilaf recipe

Ingredients

  • 20 g Cinnamon
  • 20 g Chicken Stock
  • - Onion
  • 250g Garlic
  • 250 g Carrot
  • 200 g Green Peas
  • 100 ml Olive Oil

  • 250g Parsley
  • 10G Salt
  • 50 g Black Pepper

Instructions

  1. Step 1: Heat 2 tablespoons of olive oil in a large pan over medium-high heat. Add the lamb cubes and sear until browned on all sides. Remove the lamb and set aside.
  2. Step 2: In the same pan, add the remaining olive oil. Sauté the chopped onion until translucent, about 5 minutes.
  3. Step 3: Stir in the minced garlic, ground cumin, ground coriander, turmeric, and cinnamon. Cook for 1 minute until fragrant.
  4. Step 4: Return the seared lamb to the pan. Add the bulgur wheat and toss to coat in the spices.
  5. Step 5: Pour in the hot chicken stock, add salt and black pepper to taste, and stir well. Bring to a gentle simmer.
  6. Step 6: Add the cubed carrot and cover the pan. Cook over low heat for 20 minutes, stirring occasionally.
  7. Step 7: Add the green peas during the last 5 minutes of cooking. If needed, add a splash of water to prevent sticking.
  8. Step 8: Once the bulgur is cooked and the stock is absorbed, remove from heat. Stir in the fresh parsley before serving.
