Ingredients

  • 250 ml Coconut Milk
  • 500 ml Water
  • Pcs Chings Masala Chicken Chilli
  • - Onion
  • 250g Garlic
  • 250g Ginger
  • 250g Green Chilli
  • 100 g Coriander Powder
  • 20 g Turmeric Powder
  • - Red Chilli
  • 20G Curry Leaves
  • 1 L Borges Borgefrit High-Mufa-Oleic Sunflower Oil
  • 10G Salt
  • 500 Gms Rice Flour

Instructions

  1. Heat 2 tablespoons of oil in a large pan on medium heat. Add chopped onions and sauté until they turn golden brown.
  2. Add minced garlic, grated ginger, and green chilies. Cook for 2 minutes until aromatic.
  3. Add turmeric powder, red chili powder, and coriander powder. Stir well for 1 minute to toast the spices.
  4. Add the chicken pieces to the pan and cook for 5 minutes, stirring occasionally, until lightly seared.
  5. Add coconut milk, curry leaves, and salt to taste. Mix well and add 200 ml of water to adjust the consistency.
  6. Cover and simmer on low heat for 25 minutes until the chicken is tender and the gravy thickens.
  7. Meanwhile, prepare the rice roti. In a bowl, mix rice flour, a pinch of salt, and hot water to form a soft dough.
  8. Divide the dough into small balls and roll them out into thin discs using a rolling pin.
  9. Heat a flat griddle or tava, and cook the rice rotis on medium heat until crispy on both sides. Brush with a little oil if desired.
  10. Serve the hot chicken curry alongside crispy rice roti for a complete meal.
