Ingredients
- 250 ml Coconut Milk
- 500 ml Water
- Pcs Chings Masala Chicken Chilli
- - Onion
- 250g Garlic
- 250g Ginger
- 250g Green Chilli
- 100 g Coriander Powder
- 20 g Turmeric Powder
- - Red Chilli
- 20G Curry Leaves
- 1 L Borges Borgefrit High-Mufa-Oleic Sunflower Oil
- 10G Salt
- 500 Gms Rice Flour
Instructions
- Heat 2 tablespoons of oil in a large pan on medium heat. Add chopped onions and sauté until they turn golden brown.
- Add minced garlic, grated ginger, and green chilies. Cook for 2 minutes until aromatic.
- Add turmeric powder, red chili powder, and coriander powder. Stir well for 1 minute to toast the spices.
- Add the chicken pieces to the pan and cook for 5 minutes, stirring occasionally, until lightly seared.
- Add coconut milk, curry leaves, and salt to taste. Mix well and add 200 ml of water to adjust the consistency.
- Cover and simmer on low heat for 25 minutes until the chicken is tender and the gravy thickens.
- Meanwhile, prepare the rice roti. In a bowl, mix rice flour, a pinch of salt, and hot water to form a soft dough.
- Divide the dough into small balls and roll them out into thin discs using a rolling pin.
- Heat a flat griddle or tava, and cook the rice rotis on medium heat until crispy on both sides. Brush with a little oil if desired.
- Serve the hot chicken curry alongside crispy rice roti for a complete meal.
