Spiced Kolhapuri Medley With Rustic Bajra Flatbread Recipe

A spicy and flavorful Maharashtrian dish featuring mixed vegetables in a rich Kolhapuri masala paired with wholesome bajra (pearl millet) flatbreads.
Ingredients
- 500g Cauliflower
- 250 g Carrot
- 200 g Green Peas
- 1Kg Potato
- 1 piece Coconut
- - Red Chilli
- 500 ml Water
- 1 kg Bell Peppers
- - Onion
- 250g Garlic
- 250g Ginger
- 100 G Kolhapuri Masala
- 20 g Turmeric Powder
- 100 g Coriander Powder
- 10G Salt
- 250g Coriander
- 1 kg Bajra Flour
- 1 pc (200 g) Dabur Hommade Tomato Puree
- 200 ml Sesame Oil
- 50 g Black Pepper
Instructions
- Step 1: Heat oil in a heavy-bottomed pan. Add the chopped onions and sauté until golden brown.
- Step 2: Add garlic and ginger and sauté for another minute.
- Step 3: Stir in turmeric powder, red chili powder, coriander powder, and Kolhapuri masala. Mix well.
- Step 4: Add tomato puree and cook until the oil separates from the masala.
- Step 5: Add the vegetables (cauliflower, carrot, bell pepper, green peas, and potato) and mix well.
- Step 6: Add grated coconut and enough water to achieve desired consistency. Cover and cook on medium heat for 20 minutes, stirring occasionally.
- Step 7: Season with salt and garnish with chopped coriander leaves before serving.
- Step 8: To make Bajra Bhakri, mix bajra flour and lukewarm water to form a soft dough. Divide into equal portions and roll out flatbreads.
- Step 9: Cook the flatbreads on a hot griddle until both sides are golden brown. Serve hot with the Veg Kolhapuri.
