Orange-Peanut Chicken Dinner Bowl Recipe

Ingredients
- 1 Bunch x 2 Coriander Leaves (Kotthambari)
- 500G Gustora Penne Rigate Pasta
- 230 g Jabsons Roasted Peanuts Variety Flavoured
- 230 g The Gourmet Jar Orange Marmalade
- 200 g Hello Tempayy Simply Natural Tempeh Crumbles
Instructions
- 1. Cook 250 g of pasta in a large pot of boiling water until al dente, about 7 to 9 minutes. Drain and set aside.
- 2. Heat 2/3 cup of prepared peanut satay sauce and 1/4 cup of orange marmalade in a large skillet over medium-high heat, stirring occasionally until smooth and heated through.
- 3. Add 250 g of cooked tempeh to the skillet and stir to coat evenly with the sauce. Cook for 2 to 3 minutes until the tempeh is heated through.
- 4. Add the cooked pasta and 1 tablespoon of chopped coriander leaves to the skillet. Toss everything together and cook for an additional 2 minutes to combine flavors.
- 5. Divide the mixture into two bowls. Garnish each bowl with 1 tablespoon of chopped coriander leaves and 2 tablespoons of roasted peanuts. Serve warm.
