Ingredients
- 200 g Paneer
- 250 ml Coconut Milk
- 100G Cashews
- 1 kg Basmati Rice
- 200 g Green Peas
- - Smiles-crispy Happy Potatoes-750 Gms
- 500 g Ghee
- 100 g Coriander Powder
- 20 g Turmeric Powder
- - Red Chilli
- 250g Ginger
- 250g Green Chilli
- 20G Curry Leaves
- 250g Coriander
- 10G Salt
Instructions
- Step 1: Heat half the ghee in a heavy-bottomed pan. Add cumin seeds, ginger, and green chilies. Sauté for 1-2 minutes.
- Step 2: Add diced potatoes, blanched peas, turmeric, coriander powder, and red chili powder. Stir well and cook for 5 minutes.
- Step 3: Add soaked basmati rice to the pan and gently mix. Pour 400 ml of water and season with salt. Cover and cook on low heat for 15-20 minutes until the rice is fluffy and cooked.
- Step 4: In a separate pan, heat the remaining ghee. Add curry leaves, coconut milk, and roasted cashews. Simmer for 5 minutes.
- Step 5: Add paneer cubes to the coconut curry and cook for another 5 minutes. Adjust salt as needed.
- Step 6: Serve the paneer pulao hot, garnished with fresh coriander leaves, alongside the coconut curry.
