Ingredients

  • - Grated Coconut
  • 250g Coriander
  • 250g Green Chilli
  • 250g Ginger
  • 500 ml Water
  • 20 g Turmeric Powder
  • 100 g Coriander Powder
  • - Rock Salt
  • 1 L Borges Borgefrit High-Mufa-Oleic Sunflower Oil
  • 1 kg Bajra Flour

Instructions

  1. Step 1: Heat a pan on medium flame and add 2 teaspoons of oil. Once hot, add cumin seeds and let them crackle.
  2. Step 2: Add grated ginger and chopped green chilies. Sauté for 30 seconds.
  3. Step 3: Add sprouted moong beans, turmeric powder, coriander powder, and rock salt. Mix well and add 100 ml water. Cover and cook for 8-10 minutes until the moong beans are tender but not mushy.
  4. Step 4: Once cooked, garnish with fresh coriander leaves and grated coconut. Turn off the heat.
  5. Step 5: To prepare the bajra bhakri, knead the bajra flour with warm water into a soft dough. Divide into two portions and roll each into a thick flat disc using your hands.
  6. Step 6: Heat a flat griddle (tava) and cook each bhakri on medium flame. Flip and cook both sides until slightly charred and cooked through.
  7. Step 7: Serve the sprouted moong usal hot with bajra bhakri.
