A delicious Bengali-inspired breakfast wrap featuring tender Kosha Mangsho (spiced mutton curry) wrapped in soft parathas, perfect for a hearty morning meal.
Ingredients
- 250 g Mutton
- 400 g Curd
- 500 ml Water
- 200 ml Mustard Oil
- - Onion
- 250g Garlic
- 250g Ginger
- 250g Green Chilli
- 20 g Turmeric Powder
- - Red Chilli
- 50 g Cumin Powder
- 100g Garam Masala
- 500 G Sugar
- 10G Salt
- 500 Gms Buckwheat Flour
- 500 g Ghee
Instructions
- Step 1: Heat mustard oil in a pan and sauté onions until golden brown.
- Step 2: Add garlic, ginger, and green chilies, and cook for 2 minutes.
- Step 3: Add mutton pieces to the pan, and sauté on high heat for 5 minutes.
- Step 4: Add turmeric powder, red chili powder, cumin powder, garam masala, and salt. Mix well.
- Step 5: Lower the heat and add whisked curd. Stir continuously to avoid curdling, then add water and cook for 20 minutes until the mutton is tender.
- Step 6: Sprinkle sugar, adjust seasoning, and let the curry thicken. Set aside to cool slightly.
- Step 7: Prepare the paratha dough by mixing whole wheat flour, a pinch of salt, and water. Knead into a soft dough.
- Step 8: Divide the dough into equal portions, roll into flat circles, and cook each on a hot tawa with ghee until golden and cooked through.
- Step 9: Assemble the wrap by placing Kosha Mangsho in the center of each paratha. Fold into a wrap and serve warm.
