Ingredients

  • 250 g Mutton
  • 400 g Curd
  • 500 ml Water
  • 200 ml Mustard Oil
  • - Onion
  • 250g Garlic
  • 250g Ginger
  • 250g Green Chilli
  • 20 g Turmeric Powder
  • - Red Chilli
  • 50 g Cumin Powder
  • 100g Garam Masala
  • 500 G Sugar
  • 10G Salt
  • 500 Gms Buckwheat Flour
  • 500 g Ghee

Instructions

  1. Step 1: Heat mustard oil in a pan and sauté onions until golden brown.
  2. Step 2: Add garlic, ginger, and green chilies, and cook for 2 minutes.
  3. Step 3: Add mutton pieces to the pan, and sauté on high heat for 5 minutes.
  4. Step 4: Add turmeric powder, red chili powder, cumin powder, garam masala, and salt. Mix well.
  5. Step 5: Lower the heat and add whisked curd. Stir continuously to avoid curdling, then add water and cook for 20 minutes until the mutton is tender.
  6. Step 6: Sprinkle sugar, adjust seasoning, and let the curry thicken. Set aside to cool slightly.
  7. Step 7: Prepare the paratha dough by mixing whole wheat flour, a pinch of salt, and water. Knead into a soft dough.
  8. Step 8: Divide the dough into equal portions, roll into flat circles, and cook each on a hot tawa with ghee until golden and cooked through.
  9. Step 9: Assemble the wrap by placing Kosha Mangsho in the center of each paratha. Fold into a wrap and serve warm.
