Kolhapuri Egg Curry with Jeera Rice recipe

Ingredients

  • 500 ml Water
  • - KATDARE FARMAS EGGS CURRY MASALA 10GM
  • 1 kg Basmati Rice
  • 1 piece Coconut
  • - Onion
  • 100 G Kolhapuri Masala
  • 250g Green Chilli
  • 250g Coriander
  • 10G Salt
  • 20 g Turmeric Powder

Instructions

  1. Step 1: In a deep pan, heat 2 tablespoons of oil and sauté chopped onions until golden brown. Add ginger-garlic paste and cook for a minute.
  2. Step 2: Add tomato puree, turmeric powder, and Kolhapuri masala. Cook until oil separates from the masala.
  3. Step 3: Add grated coconut and green chilies, stir well for 2 minutes. Slowly pour 250ml water and let it simmer for 5 minutes.
  4. Step 4: Gently add boiled eggs to the curry and let it cook for another 5 minutes. Adjust salt to taste.
  5. Step 5: For the jeera rice, heat 2 tablespoons of oil in a pan. Add cumin seeds and sauté until aromatic.
  6. Step 6: Add soaked rice and stir gently. Pour 150ml water, add salt to taste, and cook covered on low flame until rice is done.
  7. Step 7: Garnish egg curry with fresh coriander and serve hot with jeera rice!
