Instructions
- 1. Preheat the oven to 350°F (175°C) and grease a 9 x 13-inch baking dish with oil or butter.
- 2. In a large skillet, melt 1 tablespoon of butter over medium heat. Add 1 cup of finely chopped onion and sauté until softened, about 5 minutes.
- 3. Stir in 2 pounds of fresh spinach, 1 teaspoon of salt, and 2 minced garlic cloves. Cook, stirring frequently, until the spinach is wilted, about 5 minutes.
- 4. In a large mixing bowl, combine the cooked spinach mixture with 4 cups of cooked cabbage, 1/4 teaspoon of nutmeg, 1/4 teaspoon of cayenne pepper, 1 teaspoon of mustard, and 1/2 cup of pumpkin seeds. Mix well.
- 5. In a separate bowl, whisk together 2 eggs and 1 cup of soy milk. Stir this mixture into the spinach and cabbage mixture, ensuring everything is evenly coated.
- 6. Fold in 1 1/2 cups of shredded cheddar cheese, reserving a small handful for topping.
- 7. Transfer the mixture to the prepared baking dish, spreading it out evenly. Sprinkle the reserved cheddar cheese and 1/4 cup of pumpkin seeds on top, then dust with 1/4 teaspoon of paprika.
- 8. Bake the casserole, uncovered, for 35 to 40 minutes, or until it is heated through and lightly browned on top.
- 9. Remove from the oven and let it rest for 5 minutes before serving. Enjoy your keto-friendly spinach and cabbage casserole!
