Ingredients

  • 25 g Parsley
  • 85 g Hellmann'S Creamy Mayonnaise
  • 250 ml Dabur Hommade Lemon Juice (Bottle)
  • 500 g Snacking Seedless Cucumber - Hydroponically Grown
  • 141 g Pam Grilling Grillades Cooking Spray
  • 200 g Organigram Chia Seeds
  • 150 g Big Sam'S Norwegian Salmon

Instructions

  1. 1. Spray a medium frying pan with cooking spray and heat over medium heat.
  2. 2. Whisk 4 tablespoons of chia seeds in a bowl with 12 tablespoons of water until well combined. Let sit for 5 minutes to thicken, then pour half the mixture into the pan, swirling to create a thin omelette. Cook for 1-2 minutes until set, then transfer to a plate to cool. Repeat with the remaining mixture.
  3. 3. In a small bowl, mix 2 tablespoons of mayonnaise, 2 teaspoons of chopped fresh parsley, and 1 teaspoon of lemon juice until smooth.
  4. 4. Spread half of the mayonnaise mixture over each omelette. Top each with half of the smoked salmon slices and half of the thinly sliced cucumber.
  5. 5. Roll each omelette tightly to enclose the filling. Slice in half if desired and serve immediately.
