Ingredients
- 25 g Parsley
- 85 g Hellmann'S Creamy Mayonnaise
- 250 ml Dabur Hommade Lemon Juice (Bottle)
- 500 g Snacking Seedless Cucumber - Hydroponically Grown
- 141 g Pam Grilling Grillades Cooking Spray
- 200 g Organigram Chia Seeds
- 150 g Big Sam'S Norwegian Salmon
Instructions
- 1. Spray a medium frying pan with cooking spray and heat over medium heat.
- 2. Whisk 4 tablespoons of chia seeds in a bowl with 12 tablespoons of water until well combined. Let sit for 5 minutes to thicken, then pour half the mixture into the pan, swirling to create a thin omelette. Cook for 1-2 minutes until set, then transfer to a plate to cool. Repeat with the remaining mixture.
- 3. In a small bowl, mix 2 tablespoons of mayonnaise, 2 teaspoons of chopped fresh parsley, and 1 teaspoon of lemon juice until smooth.
- 4. Spread half of the mayonnaise mixture over each omelette. Top each with half of the smoked salmon slices and half of the thinly sliced cucumber.
- 5. Roll each omelette tightly to enclose the filling. Slice in half if desired and serve immediately.
