Ingredients

  • 200 g Green Peas
  • 250 g Carrot
  • 20G Curry Leaves
  • - Red Chilli
  • 100 g Quinoa
  • 250 ml Coconut Milk
  • - Mustard Seeds
  • 1 kg Bell Peppers
  • - Coconut Oil
  • 20 g Turmeric Powder
  • 100 g Coriander Powder
  • 10G Salt
  • 250g Coriander
  • 1 pc (200 g) Dabur Hommade Tomato Puree

Instructions

  1. Step 1: Heat coconut oil in a pan over medium heat. Add mustard seeds and allow them to splutter. Add curry leaves and sauté for 30 seconds.
  2. Step 2: Add diced carrots, capsicum, and green peas to the pan. Stir and cook for 5 minutes until slightly tender.
  3. Step 3: Stir in turmeric powder, red chili powder, coriander powder, and salt. Mix well and cook for an additional 2 minutes.
  4. Step 4: Add the tomato puree and cook for 3 minutes until the mixture thickens slightly.
  5. Step 5: Add rinsed quinoa and 2 cups of water to the pan. Stir well, cover, and let it cook on low heat for 18–20 minutes, or until the quinoa is fully cooked and fluffy.
  6. Step 6: Stir in coconut milk and cook for 2 minutes to combine flavors.
  7. Step 7: Garnish with fresh coriander leaves and serve hot.
