- 50 g Parsley Leaves
- - Basil Leaves
- 250 G Akkha Masoor
- 2 pcs Zucchini
- - Besan
- 20 g Oregano
- 60G Primi Piatti Red Chilli Flakes
- - Olive Oil
- 50 g Black Pepper Powder
- 100 g Hing Khoda
- 100 g Salt
Instructions
- Step 1: Rinse 1 cup of Akkha Masoor (whole lentils) thoroughly under cold water and soak them in water for 4-6 hours or overnight.
- Step 2: Drain the soaked lentils and cook them in a pot with enough water until tender, approximately 10-15 minutes. Drain and let cool.
- Step 3: Grate 1 medium zucchini and squeeze out the excess moisture using a clean kitchen towel or cheesecloth.
- Step 4: Finely chop a handful of basil leaves and parsley leaves. Set aside.
- Step 5: In a large mixing bowl, combine the cooked lentils, grated zucchini, 2 tablespoons of besan (gram flour), chopped basil and parsley, 1 teaspoon of oregano, 1/2 teaspoon of Primi Piatti red chili flakes, 1/2 teaspoon of black pepper powder, 1/4 teaspoon of hing khoda (asafoetida), and salt to taste.
- Step 6: Mix the ingredients thoroughly until a cohesive dough-like mixture forms. If the mixture is too wet, add a little more besan to bind.
- Step 7: Preheat a nonstick skillet or frying pan over medium heat and drizzle with 2 tablespoons of olive oil.
- Step 8: Shape the mixture into small bite-sized patties or balls using your hands.
- Step 9: Place the bites onto the hot skillet, ensuring they are evenly spaced. Cook each side for 3-4 minutes or until golden brown and crisp.
- Step 10: Remove the bites from the skillet and let them cool slightly on a paper towel to drain excess oil.
