Instructions

  1. Step 1: Preheat a skillet over medium-high heat. Rub the lamb chops with 2 tablespoons of olive oil, 1 teaspoon of salt, black pepper, parsley, thyme, and minced garlic.
  2. Step 2: Sear the lamb chops in the skillet for 3-4 minutes on each side until golden brown. Transfer to a plate, cover, and let rest.
  3. Step 3: In a rice cooker, heat 1 tablespoon of olive oil on the sauté setting. Add the chopped onion, carrot, zucchini, and tomatoes. Cook for 5 minutes until softened.
  4. Step 4: Add paprika, cumin, cinnamon, and 0.5 teaspoon of salt to the vegetables. Stir and cook for 1 minute to release the aromas.
  5. Step 5: Mix the pearl couscous into the vegetable mixture in the rice cooker. Pour in the warm vegetable stock and stir. Switch to the rice cooking setting and let it cook for approximately 15 minutes or until the couscous is tender and the liquid is absorbed.
