A flavorful diabetic-friendly dish that combines protein-rich lentils and low-GI millet in a creamy yogurt-based kadhi, paired with perfectly grilled vegetables for a wholesome dinner.
Ingredients
- 250g Green Chilli
- 20G Curry Leaves
- 250 g Carrot
- 2 pcs Zucchini
- 500 g Besan
- 200 g Fenugreek Seeds
- 75 G Cinnamon Stick/ Dal Chini 75 Grams
- 20 g Turmeric Powder
- 250g Ginger
- 100 ml Olive Oil
- 10G Salt
- 250g Coriander
- 100g Greek Yogurt
- - Cumin Seed
- 1 kg Rice
Instructions
- Step 1: Cook the soaked foxtail millet in a rice cooker with 2:1 water (2 parts water to 1 part millet) and a pinch of salt. Once cooked, fluff with a fork and set aside.
- Step 2: Cook the soaked moong dal in a pressure cooker or pot until soft and mushy. Mash lightly and set aside.
- Step 3: To prepare the kadhi, whisk the yogurt, besan, turmeric, and 1 cup of water until smooth. Add the mashed moong dal and mix well.
- Step 4: In a heavy-bottomed pan, heat 1 tbsp olive oil and add cumin seeds, fenugreek seeds, cinnamon stick, hing, and curry leaves. Add grated ginger and green chilies, sauté for a minute.
- Step 5: Reduce the heat and slowly pour the yogurt mixture into the pan, stirring continuously to avoid curdling. Simmer on low heat for 8-10 minutes, stirring occasionally. Add salt to taste.
- Step 6: Meanwhile, toss the carrot, zucchini, and capsicum in 1 tbsp olive oil and a pinch of salt. Grill the vegetables in a grill pan or oven until tender and lightly charred.
- Step 7: Serve the spiced millet alongside a generous ladle of lentil kadhi, topped with grilled vegetables. Garnish with fresh coriander leaves.
