Golden Millet Kadhi Lentil Fusion with Charred Veg recipe

Ingredients

  • 250g Green Chilli
  • 20G Curry Leaves
  • 250 g Carrot
  • 2 pcs Zucchini
  • 500 g Besan
  • 200 g Fenugreek Seeds
  • 75 G Cinnamon Stick/ Dal Chini 75 Grams
  • 20 g Turmeric Powder
  • 250g Ginger
  • 100 ml Olive Oil
  • 10G Salt
  • 250g Coriander
  • 100g Greek Yogurt
  • - Cumin Seed
  • 1 kg Rice

Instructions

  1. Step 1: Cook the soaked foxtail millet in a rice cooker with 2:1 water (2 parts water to 1 part millet) and a pinch of salt. Once cooked, fluff with a fork and set aside.
  2. Step 2: Cook the soaked moong dal in a pressure cooker or pot until soft and mushy. Mash lightly and set aside.
  3. Step 3: To prepare the kadhi, whisk the yogurt, besan, turmeric, and 1 cup of water until smooth. Add the mashed moong dal and mix well.
  4. Step 4: In a heavy-bottomed pan, heat 1 tbsp olive oil and add cumin seeds, fenugreek seeds, cinnamon stick, hing, and curry leaves. Add grated ginger and green chilies, sauté for a minute.
  5. Step 5: Reduce the heat and slowly pour the yogurt mixture into the pan, stirring continuously to avoid curdling. Simmer on low heat for 8-10 minutes, stirring occasionally. Add salt to taste.
  6. Step 6: Meanwhile, toss the carrot, zucchini, and capsicum in 1 tbsp olive oil and a pinch of salt. Grill the vegetables in a grill pan or oven until tender and lightly charred.
  7. Step 7: Serve the spiced millet alongside a generous ladle of lentil kadhi, topped with grilled vegetables. Garnish with fresh coriander leaves.
