Ingredients
- - KATDARE FARMAS EGGS CURRY MASALA 10GM
- 500 Gms Buckwheat Flour
- 1 L Borges Borgefrit High-Mufa-Oleic Sunflower Oil
- - Onion
- 1 kg Bell Peppers
- 250g Green Chilli
- 250g Coriander
- - Chaat Masala
- - Red Chilli
- 20 g Turmeric Powder
- 10G Salt
- 100 g Lemon
- - Coconut Mint Chutney Mix
Instructions
- Step 1: Prepare the dough using whole wheat flour, a pinch of salt, and water until soft and pliable. Rest for 20 minutes, covered.
- Step 2: Roll out the dough into small circles and cook on a hot skillet with a drizzle of oil until golden brown and cooked on both sides. Set aside.
- Step 3: Heat 1 tbsp oil in a pan. Sauté sliced onions, bell peppers, green chili, and tomatoes until softened. Add turmeric powder, red chili powder, chaat masala, and salt. Mix well and cook for 2 more minutes.
- Step 4: Whisk eggs with salt and pepper. Heat 1 tbsp oil in a non-stick pan and pour half the egg mixture. Spread it evenly and cook until set. Place a cooked paratha on the egg before the eggs fully set.
- Step 5: Flip the paratha-egg combination, cook for 30 seconds, and remove. Repeat with the remaining egg and parathas.
- Step 6: Assemble the rolls by spreading mint chutney on the egg side of the paratha. Add the cooked vegetable filling, coriander leaves, and a squeeze of lemon juice.
- Step 7: Roll tightly and serve hot.
