Ingredients
- 100 g Garlic
- - Shrimps
- 1 bunch Thai Basil
- - Butter
- 500g Sweet Lime
- 200 ml Fish Sauce
- 500g Lemongrass
- 200 ml Coconut Milk
- 1 l Refined Soyabean Oil
- 200 g Table Salt
- - Chili Paste
Instructions
- 1. Clean and devein the shrimps, ensuring all impurities are removed. Pat them dry with a paper towel and set aside.
- 2. Crush the butter cookies into fine crumbs using a food processor or by placing them in a sealed bag and crushing them with a rolling pin. Set aside for later use.
- 3. Heat 2 tablespoons of Champion Oil in a pan over medium heat. Add 100g of thinly sliced garlic and sauté until golden brown, being careful not to burn it.
- 4. Stir in 1 tablespoon of sambal chili paste and cook for 1-2 minutes to release its flavors. Adjust the amount based on your spice preference.
- 5. Add the shrimps to the pan and cook for 2-3 minutes on each side, or until they turn pink and opaque. Ensure they are evenly coated with the garlic and chili mixture.
- 6. Sprinkle the crushed butter cookies into the pan, stirring gently to combine. Allow the cookie crumbs to lightly caramelize and blend with the savory flavors for 1-2 minutes. This step introduces a subtle sweetness to balance the spice.
- 7. Toss in a handful of fresh Thai basil leaves and season with table salt to taste. Cook for an additional 1-2 minutes, allowing the basil to wilt and the flavors to meld.
- 8. Serve the shrimp hot, garnished with a few extra Thai basil leaves for an aromatic finish.
