Ingredients
- 100 g Unsalted Butter
- 750 Ml Kalverts White Vinegar
- 250 g French Beans
- 1 kg Orange
- - Olive Oil
- 50 g Honey
- 370 G Freshos Dijon Mustard
- 50 g Black Pepper
- - Thyme Leaves
- - Baby Tomatoes
- 1 Kg Small Indian Salmon
- 100 g Salt
Instructions
- 1. Begin by prepping the Salmon first: pat it dry and season both sides with 1 tsp salt, 1 tsp black pepper, and 1 tsp dried thyme.
- 2. Heat olive oil in a large skillet over medium heat. Place the salmon in the skillet and sear for 5-6 minutes per side until golden brown and cooked through. Remove from the skillet and set aside.
- 3. In the same skillet, add butter and reduce heat to low. Stir in the freshly squeezed orange juice, Dijon mustard, honey, and white vinegar, whisking continuously for 2-3 minutes until the sauce thickens.
- 4. Meanwhile, blanch the green beans in boiling water for 3 minutes until tender yet crisp. Drain and lightly season with a pinch of salt.
- 5. Halve the cherry tomatoes and sauté them in the skillet for 2 minutes to soften slightly, then add the blanched green beans to the skillet and toss to combine.
- 6. Plate the seared salmon, pour the orange-Dijon sauce over the top, and serve alongside the sautéed vegetables for a complete meal.
