  • 250 g French Beans
  • 1 kg Orange
  • - Olive Oil
  • 50 g Honey
  • 370 G Freshos Dijon Mustard
  • 50 g Black Pepper
  • - Thyme Leaves
  • - Baby Tomatoes
  • 1 Kg Small Indian Salmon
  • 100 g Salt

Instructions

  1. 1. Begin by prepping the Salmon first: pat it dry and season both sides with 1 tsp salt, 1 tsp black pepper, and 1 tsp dried thyme.
  2. 2. Heat olive oil in a large skillet over medium heat. Place the salmon in the skillet and sear for 5-6 minutes per side until golden brown and cooked through. Remove from the skillet and set aside.
  3. 3. In the same skillet, add butter and reduce heat to low. Stir in the freshly squeezed orange juice, Dijon mustard, honey, and white vinegar, whisking continuously for 2-3 minutes until the sauce thickens.
  4. 4. Meanwhile, blanch the green beans in boiling water for 3 minutes until tender yet crisp. Drain and lightly season with a pinch of salt.
  5. 5. Halve the cherry tomatoes and sauté them in the skillet for 2 minutes to soften slightly, then add the blanched green beans to the skillet and toss to combine.
  6. 6. Plate the seared salmon, pour the orange-Dijon sauce over the top, and serve alongside the sautéed vegetables for a complete meal.
