A light and flavorful pescatarian dinner featuring tender flounder baked on a bed of spinach, topped with a creamy basil and red bell pepper sauce.
Ingredients
- 250 g Spinach - Chopped
- 14 g On1Y Basil Leaves
- 125 g Red Bell Pepper
- 1 kg Akar Powder Salt
- 500 ml Sids Farm Toned Milk
- 60G Primi Piatti Red Chilli Flakes
Instructions
- 1. Preheat the oven to 400°F (200°C).
- 2. Spread 2 packages of spinach evenly in an ungreased rectangular baking dish, approximately 11 x 7 x 2 inches.
- 3. Sprinkle 1/4 tsp salt evenly over the spinach.
- 4. In a blender or food processor, combine 1/2 cup chopped red bell pepper, 1/4 cup fresh basil leaves, 1 tbsp milk, and 1/8 tsp red pepper flakes. Blend on high speed for about 15 seconds or until smooth.
- 5. Pour the blended basil and red bell pepper sauce evenly over the spinach.
- 6. Cover the baking dish with aluminum foil and bake for 25 to 30 minutes.
- 7. Serve hot, ensuring each portion includes spinach and sauce.
