Ingredients

  • 100 g Coriander Leaves
  • 1 head Cauliflower
  • - Besan
  • 200 g Sour Cream
  • 1Bunch Pudina
  • - Rice Flour
  • 1 l Refined Soyabean Oil
  • - Red Chilli Powder
  • 20 g Turmeric Powder
  • - Coriander Powder
  • 50 g Cumin Powder
  • 100 g Hing Khoda
  • 100 g Salt
  • 50 g Black Pepper Powder

Instructions

  1. 1. Wash the cauliflower florets thoroughly and pat them dry. Ensure they are bite-sized for even cooking.
  2. 2. In a mixing bowl, combine chickpea flour, rice flour, chili powder, turmeric powder, coriander powder, cumin powder, hing, and salt. Mix well to create a spiced batter.
  3. 3. Gradually add oil to the dry mix while stirring to form a thick paste. Coat the cauliflower florets evenly with the batter.
  4. 4. Preheat the air fryer to 180°C (356°F). Arrange the coated cauliflower florets in a single layer in the air fryer basket. Air-fry for 12-15 minutes, flipping halfway through, until golden and crispy.
  5. 5. While the cauliflower is cooking, prepare the dressing by combining sour cream, chopped coriander, chopped mint, lemon juice, black pepper, and a pinch of salt in a bowl. Stir until smooth.
  6. 6. Once the cauliflower is cooked, transfer it to a serving plate. Drizzle the soured cream and herb dressing over the cauliflower popcorn or serve it as a dipping sauce on the side.
  7. 7. Garnish with a sprinkle of fresh coriander leaves and serve warm for a flavorful snack.
