- - Corn Starch Powder
- 1 bunch Spring Onion
- 50 g White Sesame Seeds
- 400 g Sweet Corn Kernels
- 200 g Table Salt
- 500 g Wheat Flour / Maida
- 100 g Baking Powder
- 500 Ml Champion Oil
- 100 G Coconut Powder
Instructions
- 1. Remove the corn kernels from the cob and set them aside. Ensure the kernels are clean and free of any debris.
- 2. In a mixing bowl, combine 1 cup of all-purpose flour, 1/2 cup of corn starch or rice flour, 1/3 cup of desiccated coconut powder, 1/2 teaspoon of baking powder, 1 teaspoon of white sesame seeds, and a pinch of salt to taste. Mix the dry ingredients thoroughly.
- 3. Add 1 teaspoon of finely chopped, deseeded jalapenos and 1-2 tablespoons of chopped spring onions to the dry mixture. Gradually add 1 to 1 1/2 cups of cold water while stirring continuously to form a smooth, thick batter. The batter should be thick enough to coat the back of a spoon but not too runny. Fold in the sweet corn kernels and mix well.
- 4. Heat Champion Oil in a deep frying pan or cauldron over medium heat. To test if the oil is hot enough, drop a small amount of batter into the oil; it should sizzle and rise to the surface immediately. Maintain the oil temperature at approximately 350°F (175°C) for optimal frying.
- 5. Using a spoon or your hands, drop small portions of the batter into the hot oil to form fritters. Fry 3-4 fritters at a time, ensuring not to overcrowd the pan. Cook the fritters for 3-4 minutes, turning occasionally, until they are golden brown and crisp.
- 6. Remove the fritters from the oil using a slotted spoon and drain them on a plate lined with tissue paper to absorb excess oil.
