Ingredients
- 250 g Jasmine Rice
- 200Ml Kara Coconut Milk Classic (200ml)
- 200 ml Sesame Oil
- 700 Ml Healthy Boy Thai Soy Sauces
- 500 g Sugar
- 100 g Til
- 1 bunch Spring Onion
- medium Chilli Green Long
- 250 ml Lemon Juice Concentrate
- 100 g Coriander Leaves
- 100 g Salt
Instructions
- 1. Rinse the jasmine rice under cold water until the water runs clear to remove excess starch.
- 2. In a medium-sized pot, heat 2 tbsp of sesame oil over medium heat, then add the rinsed rice and stir gently for 1-2 minutes until the grains are slightly toasted.
- 3. Add the coconut milk, salt, and kaffir lime leaves (if using) to the pot. Stir well and bring the mixture to a gentle boil.
- 4. Reduce the heat to low, cover the pot with a tight-fitting lid, and let the rice simmer for 15-18 minutes until all the liquid is absorbed and the rice is tender.
- 5. While the rice cooks, in a small bowl, mix the soy sauce, sugar, lime juice, and green chili to create a flavorful dressing.
- 6. Once the rice is cooked, remove it from the heat and let it sit covered for 5 minutes. Discard the kaffir lime leaves, if used.
- 7. Fluff the rice gently with a fork and transfer it to a serving bowl. Drizzle the prepared dressing over the rice and mix gently.
- 8. Garnish with chopped coriander, roasted sesame seeds, and spring onions before serving warm.
