Ingredients
- 100 g Lemongrass
- 250 g Tendercuts Basa Boneless Fillet F&S
- 250 g Jasmine Rice
- 110 g Unpeeled Garlic Cloves
- loose Ginger
- - Dark Soy Sauce-90 GM
- - Lime Juice-750 Ml
- 200 g Orange Carrot (Gajar)
- 250 g French Beans
- 200 G Spring Onion(200Gm)
- 1 ltr Anveshan Cold Pressed Black Sesame Oil
- 1 pack (1 kg) Aashirvaad Crystal Salt | Iodised
- - Red Chilli Powder
Instructions
- 1. Rinse the jasmine rice thoroughly and cook it in 300 ml of water until tender, then set aside to cool.
- 2. Finely chop the lemongrass, garlic, and ginger to create a fragrant marinade base.
- 3. Mix the chopped lemongrass, garlic, ginger, soy sauce, and lime juice in a bowl, then coat the fish fillets with this mixture.
- 4. Let the fish marinate for 15 minutes while you prepare the vegetables by dicing the carrot and trimming the green beans.
- 5. Heat 1 tbsp of sesame oil in a pan and cook the marinated fish fillets on medium heat for 4-5 minutes on each side until golden and cooked through.
- 6. Remove the fish from the pan and cover to keep warm while you prepare the rice.
- 7. In the same pan, heat the remaining sesame oil and stir-fry the diced carrot, green beans, and chopped spring onions for 4-5 minutes.
- 8. Add the cooked jasmine rice to the pan, season with salt, and stir-fry for another 3-4 minutes until the rice absorbs the flavors.
- 9. Optionally, slice the red chili and add it to the stir-fry for a spicy kick.
- 10. Serve the stir-fried jasmine rice on plates and top each portion with a lemongrass-infused fish fillet.
