Ingredients

  • 1 kg Basmati Rice
  • 100 g Lemon Grass
  • 250 g Tendercuts Basa Boneless Fillet F&S
  • 1 piece Coconut
  • medium Chilli Green Long
  • loose Ginger
  • - Dark Soy Sauce-90 GM
  • 500 ml Oil (For Frying)
  • 250 ml Real Thai Unsweetened Coconut Milk
  • 1 pack (1 kg) Aashirvaad Crystal Salt | Iodised
  • 1 Bunch Coriander Leaves ( Kottambari Soppu )

Instructions

  1. 1. Rinse the fish fillets under cold water and pat them dry with a paper towel.
  2. 2. Finely chop the lemongrass stalks and green chilies; grate the fresh ginger to prepare the marinade.
  3. 3. In a bowl, mix soy sauce, lemongrass, ginger, chilies, and 1 tbsp of vegetable oil, then coat the fish evenly.
  4. 4. Heat 1 tbsp vegetable oil in a pan over medium heat and sear the marinated fish for 3-4 minutes on each side until golden.
  5. 5. In a pot, rinse the rice thoroughly and add 200 ml coconut milk, 400 ml water, and a pinch of salt.
  6. 6. Cook the rice on medium heat, stirring occasionally, until the liquid is absorbed and the rice is tender.
  7. 7. Remove the fish from the pan and let it rest for a minute; garnish with fresh coriander leaves before serving.
  8. 8. Fluff the coconut rice with a fork and plate it alongside the fish for a balanced meal.
  9. 9. Adjust salt and spice levels to taste before serving to ensure a balanced flavor.
