Ingredients
- 200Ml Kara Coconut Milk Classic (200ml)
- - Fresh Cream
- 250 ml Lemon Juice Concentrate
- 100 g Lemon
- 50 g Agar Agar
- 500 g Sugar
- 100 g Lemon Grass
- 100 g Coconut Shredded
Instructions
- 1. In a saucepan, combine coconut milk, heavy cream, sugar, and the lemongrass stalk (lightly bruised for flavor). Heat gently over medium-low heat until the sugar dissolves and the mixture is fragrant, about 5 minutes. Remove the lemongrass and set aside.
- 2. Sprinkle gelatin powder over 2 tablespoons of lime juice in a small bowl and let it bloom for 5 minutes. Heat the bloomed gelatin in a microwave or double boiler until fully dissolved.
- 3. Gradually whisk the whey protein powder into the coconut milk mixture until well incorporated. Stir in the remaining lime juice and dissolved gelatin, ensuring the mixture is smooth and uniform.
- 4. Pour the mixture into serving glasses or molds and refrigerate for at least 4 hours or until set.
- 5. Once the panna cotta is firm, garnish with lime zest and toasted coconut flakes before serving. Enjoy chilled.
