- 100 g Coriander Leaves
- 1 kg Bell Peppers
- 2 pcs Zucchini
- 500 g Tomato - Hybrid
- 500 g Black Beans
- 1 kg Basmati Rice
- - Olive Oil
- 50 g Cumin Powder
- 30 g Smoked Paprika Powder
- 20 g Turmeric Powder
- - Red Chilli Powder
- 100 g Salt
Instructions
- 1. Heat 1 tablespoon of olive oil in a pan over medium heat. Add the asafoetida, cumin powder, smoked paprika, turmeric powder, and red chili powder. Toast the spices for 30 seconds until fragrant.
- 2. Add the sliced bell peppers and zucchini to the pan. Sprinkle a pinch of salt and sauté for 5-7 minutes until the vegetables are tender but still slightly crisp.
- 3. Stir in the diced tomatoes and cooked black beans. Cook for another 3-4 minutes, allowing the flavors to meld together.
- 4. In a separate bowl, fluff the cooked basmati rice with a fork and drizzle with 1 tablespoon of olive oil and a squeeze of fresh lime juice. Mix gently to evenly coat the rice.
