  • 500 g Onion
  • 100 g Coriander Leaves
  • 250 gm Pork Nurnberg Sausages
  • 20 g Oregano
  • - Tortilla Wraps
  • 100 g Pineapple
  • - Tabasco Chipotle Pepper Sauce
  • - Achiote Paste
  • 100 g Garlic
  • 200 g Table Salt
  • 190 ml White Cooking Vinegar
  • 50 g Cumin Powder
  • - Dry Red Chillies
  • 500g Sweet Lime

Instructions

  1. 1. In a small pot, bring water to a boil and add the dry red chilies. Turn off the heat and let the chilies steep until they are pliable, about 10 minutes. Remove the chilies from the water, discard stems and seeds, and transfer them to a blender.
  2. 2. Add 1/2 cup of pineapple juice to the blender with the chilies and blend until very smooth. Pass the mixture through a fine mesh sieve, using a spatula or spoon to press the mixture through. Return the strained mixture to the blender.
  3. 3. Add cumin powder, oregano, garlic, 1 tablespoon of white cooking vinegar, and 1 tablespoon of table salt to the blender. Blend until smooth to create the marinade.
  4. 4. In a large bowl or dish, layer the pork Nurnberg sausages and sliced onions, slathering the marinade between each layer. Cover with plastic wrap and refrigerate for 1 hour (do not exceed this time due to the powerful pineapple enzymes).
  5. 5. Heat a very large skillet or griddle on high heat until scorching hot. Sprinkle a little table salt on both sides of the marinated pork. Sear the pork for 1-2 minutes on each side, ensuring it develops a nice crust. Add the onions from the marinade to the pan and cook until softened.
  6. 6. If the pork does not release enough fat, add a small amount of oil to the pan. Sear all the pork and then dice it roughly into 1/2-inch cubes. Return the diced meat to the pan in batches (do not overcrowd) and cook until browned, about 10 minutes.
  7. 7. Add the marinated onions to the pan or griddle and cook until caramelized. Remove from heat and set aside.
  8. 8. Heat small tortilla wraps on the pan or griddle until warm and pliable.
  9. 9. To assemble the tacos, place two tortillas on a plate. Add a pile of diced pork on top, followed by caramelized onions and fresh coriander leaves. Optionally, you can add toppings like tomatillo salsa or grilled pineapple slices.
