Ingredients
- 100 g Sambar Onion Peeled
- 500 g Organically Grown Tomato (Hybrid) (Tamatar)
- 500 G Preserved Dried Salted Black Beans
- 250 g Organically Grown Green Capsicum
- 250 g Zucchini Green
- 16 g Orika Oregano
- 850 g Oleev Smart Vitafit Edibale Vegetable Oil
- 100 g Chukde Bhuna Jeera Powder / Cumin Powder
- 1 kg Tata Salt (Vacuum Evaporated Iodised)
Instructions
- 1. Preheat your oven to 375°F (190°C).
- 2. In a large saucepan, heat 1 tablespoon of vegetable oil over medium heat. Add 1 diced onion and sauté until tender, about 5 minutes.
- 3. Stir in 1 diced tomato, 1 1/2 teaspoons ground cumin, 1 teaspoon salt, and 1/2 teaspoon dried oregano. Cook for 2 minutes to combine the flavors.
- 4. Add 1 cup of cooked black beans, 1 diced green pepper, and 1 diced zucchini to the saucepan. Mix well and cook for 5 minutes.
- 5. Transfer the mixture to a baking dish and spread evenly. Cover with foil and bake in the preheated oven for 20 minutes.
- 6. Remove the foil and bake for an additional 10 minutes to allow the vegetables to caramelize slightly.
- 7. Serve warm as a wholesome and delicious vegan dinner.
