Ingredients

  • 500 g Onion
  • - Bell Peppers
  • 1 kg Sweet Potato
  • 348 g Wrap Tortilla
  • 500 g Black Beans
  • - Cheese Slices
  • 1 l Refined Soyabean Oil
  • 200 g Table Salt
  • - Red Chilli Powder

Instructions

  1. 1. Preheat your oven to 375°F (190°C).
  2. 2. Peel and dice the sweet potatoes into small cubes. Boil them in water for about 10-15 minutes until tender, then drain and set aside.
  3. 3. In a large skillet, heat a little oil over medium heat. Add 1 diced onion and 2-3 minced garlic cloves, sauté until the onion becomes translucent.
  4. 4. Add 1 diced red capsicum to the skillet, followed by the black beans. Stir and cook for 5 minutes.
  5. 5. Stir in the boiled sweet potatoes, 1 teaspoon of cumin (jeera), 1 teaspoon of paprika, 1/2 teaspoon of red chili powder, and salt to taste. Mix well and allow the flavors to combine for another 5 minutes.
  6. 6. In a small bowl, mix 1 tablespoon of corn starch with a bit of water to form a slurry. Add to the skillet mixture to slightly thicken it.
  7. 7. Take a tortilla and place a generous amount of the sweet potato and black bean mixture down the center. Roll it up and place seam-side down in a baking dish.
  8. 8. Repeat with remaining tortillas till the filling is used up.
  9. 9. Pour sour cream over the top of the enchiladas and sprinkle generously with cheese slices.
  10. 10. Bake in the preheated oven for 20-25 minutes or until the cheese is melted and bubbly.
