Ingredients

  • 100 g Coriander Leaves
  • 1 lb Ground Beef
  • 500 g Tomato - Hybrid
  • 1 kg Bell Peppers
  • - Cheddar Cheese Powder 100g
  • - Olive Oil
  • 200 g Sour Cream
  • 50 g Cumin Powder
  • 30 g Smoked Paprika Powder
  • - Red Chilli Powder
  • 50 g Black Pepper Powder
  • 100 g Salt

Instructions

  1. 1. Heat 2 tablespoons of olive oil in a pan over medium heat. Add the ground beef and cook until browned, breaking it into small pieces with a spatula, about 6-8 minutes.
  2. 2. Add the chopped tomato, red bell pepper, cumin powder, smoked paprika, chili powder, black pepper, and salt to the pan. Mix well and cook for 5-7 minutes until the vegetables soften and the spices are aromatic.
  3. 3. Pour in the chipotle sauce and stir to coat the beef mixture evenly. Let it simmer for 3-4 minutes, then remove from heat and set it aside to cool slightly.
  4. 4. Preheat your oven to 180°C (350°F). Lightly grease a baking dish with olive oil.
  5. 5. Take each tortilla and spoon a generous amount of the beef mixture into the center. Roll the tortilla tightly and place it seam-side down in the prepared baking dish. Repeat with all the tortillas.
  6. 6. Spread any remaining beef mixture and chipotle sauce over the rolled tortillas. Sprinkle the grated cheese evenly on top.
  7. 7. Bake the enchiladas in the preheated oven for 15-20 minutes, or until the cheese is melted and bubbly.
  8. 8. Remove the dish from the oven and let it cool slightly. Garnish with chopped coriander leaves and serve hot with a dollop of sour cream if desired.
