Instructions

  1. 1. Heat 1/4 cup olive oil in a 2-quart pot over medium heat. Add 1 diced cooking onion and sauté for 3-4 minutes until softened.
  2. 2. Add 1/2 cup diced carrots and 1/4 cup diced green pepper to the pot. Cook for another 5 minutes, stirring occasionally, until the vegetables are tender.
  3. 3. Stir in 2 tablespoons tomato paste, 2 tablespoons chili powder, 1/4 teaspoon cumin, 2 teaspoons garlic powder, and 1 tablespoon cocoa powder. Cook for 1-2 minutes to toast the spices.
  4. 4. Add 1 cup tomato puree and 1 cup drained and rinsed red kidney beans to the pot. Pour in enough water to cover the ingredients by about 1 inch.
  5. 5. Bring the mixture to a boil, then reduce the heat to low and simmer for 20-25 minutes, stirring occasionally, until the flavors meld and the chili thickens.
