- 100 g Coriander Leaves
- 250 G Masur Dal
- 1pc Avocado
- 500 g Tomato - Hybrid
- 250 g Cucumber
- 500 g Capsicum Green
- 100 g Lemon
- - Olive Oil
- 50 g Cumin Powder
- 30 g Smoked Paprika Powder
- - Red Chilli Powder
- 100 g Salt
- 50 g Black Pepper
Instructions
- 1. Heat olive oil in a pan over medium heat. Add asafoetida, cumin powder, smoked paprika, and red chili powder, stirring for 30 seconds until aromatic.
- 2. Add the cooked lentils to the pan and season with salt and black pepper. Cook for 3-5 minutes, stirring occasionally, until the lentils are well-coated with the spices and heated through. Remove from heat and set aside.
- 3. In a small bowl, mash the avocado with lime juice, a pinch of salt, and black pepper to make a y spread.
- 4. Warm the -free tortillas in a dry skillet for 15-20 seconds on each side until pliable.
- 5. Assemble the tacos by spreading a layer of mashed avocado on each tortilla. Add a generous spoonful of the spiced lentils, followed by chopped tomato, cucumber, and green bell pepper.
- 6. Sprinkle fresh cilantro on top for garnish and serve immediately. Optionally, squeeze extra lime juice over the tacos for added zest.
