Ingredients
- 100 g Coriander Leaves
- - Chicken Breast
- - Red Chilli Powder
- 30 g Smoked Paprika Powder
- - Olive Oil
- 6 pcs White Eggs
- 500 g Tomato - Hybrid
- 500 g Capsicum Green
- - Cheddar Cheese Powder 100g
- 50 g Black Pepper Powder
- 100 g Lemon
- 200 g Sour Cream
- 100 g Salt
Instructions
- 1. Trim and dice the chicken breast into small pieces. In a bowl, mix the chicken with chipotle chili powder, smoked paprika, 1 tbsp olive oil, and a pinch of salt. Let it marinate for 15 minutes.
- 2. Heat the remaining 1 tbsp olive oil in a skillet over medium heat. Add the marinated chicken and cook for 8-10 minutes until fully cooked and browned, stirring occasionally.
- 3. In a separate bowl, whisk the eggs with a pinch of salt and black pepper. Heat a small non-stick pan over low heat and scramble the eggs until fluffy and fully set, about 5 minutes.
- 4. Dice the tomatoes and bell peppers, and chop the fresh cilantro. Prepare the tortillas by warming them briefly on a skillet or directly over a flame for 15 seconds each side.
- 5. Assemble the burritos: Place each tortilla flat and add a layer of scrambled eggs, cooked chicken, diced tomatoes, bell peppers, shredded cheddar cheese, and cilantro. Squeeze lime juice over the filling and drizzle sour cream for added flavor.
- 6. Wrap the burrito tightly, folding in the sides to enclose the filling. Serve warm and enjoy a spicy, protein-packed breakfast!
