Ingredients
- 1 pc (approx. 250g-500g) Lettuce Iceberg
- 100 g Coriander Leaves
- 100 g Quinoa
- 500 g Black Beans
- 400G Safa Tomato Paste (400g)
- 1pc Avocado
- - Red Chilli Powder
- 100 g Hing Khoda
- 250 ml Lemon Juice Concentrate
- 1 kg Bell Peppers
- 100 g Jeera Powder
- 20 g Turmeric Powder
- 1 liter Sunflower Oil
- 100 g Salt
Instructions
- 1. Heat the vegetable oil in a pan over medium heat. Add hing (asafoetida), chipotle chili powder, cumin, and turmeric powder. Stir for 30 seconds to release the spices’ aroma.
- 2. Add diced bell peppers and sauté for 3-4 minutes until softened but still slightly crisp.
- 3. Mix in the black beans and cooked quinoa, stirring well to coat everything in the spice mixture. Cook for another 2-3 minutes to warm through.
- 4. Remove the pan from heat and stir in lime juice and salt to taste. Let the mixture cool slightly.
- 5. Assemble the bowl by layering shredded lettuce at the bottom, followed by the quinoa and black bean mixture, diced tomatoes, avocado, and fresh coriander.
- 6. Serve immediately, adjusting lime juice and salt if needed for added flavor.
