Ingredients

  • 1 pc (approx. 250g-500g) Lettuce Iceberg
  • 100 g Coriander Leaves
  • 100 g Quinoa
  • 500 g Black Beans
  • 400G Safa Tomato Paste (400g)
  • 1pc Avocado
  • - Red Chilli Powder
  • 100 g Hing Khoda
  • 250 ml Lemon Juice Concentrate
  • 1 kg Bell Peppers
  • 100 g Jeera Powder
  • 20 g Turmeric Powder
  • 1 liter Sunflower Oil
  • 100 g Salt

Instructions

  1. 1. Heat the vegetable oil in a pan over medium heat. Add hing (asafoetida), chipotle chili powder, cumin, and turmeric powder. Stir for 30 seconds to release the spices’ aroma.
  2. 2. Add diced bell peppers and sauté for 3-4 minutes until softened but still slightly crisp.
  3. 3. Mix in the black beans and cooked quinoa, stirring well to coat everything in the spice mixture. Cook for another 2-3 minutes to warm through.
  4. 4. Remove the pan from heat and stir in lime juice and salt to taste. Let the mixture cool slightly.
  5. 5. Assemble the bowl by layering shredded lettuce at the bottom, followed by the quinoa and black bean mixture, diced tomatoes, avocado, and fresh coriander.
  6. 6. Serve immediately, adjusting lime juice and salt if needed for added flavor.
