Ingredients

  • 100 g Coriander Leaves
  • - Chicken Breast
  • 200G Veeba Cheesy Melt Cheddar (200g)
  • 500 g Tomato - Hybrid
  • 100 g Lemon
  • 30 g Smoked Paprika Powder
  • 50 g Cumin Powder
  • - Red Chilli Powder
  • 100 g Salt
  • 50 g Black Pepper Powder
  • 1 liter Sunflower Oil

Instructions

  1. 1. In a bowl, mix the diced chicken with smoked paprika, cumin powder, chili powder, salt, and black pepper. Let it marinate for 10 minutes.
  2. 2. Heat 1 tablespoon of vegetable oil in a skillet over medium heat. Add the marinated chicken and cook for 6-8 minutes until fully cooked and lightly browned. Remove from the skillet and set aside.
  3. 3. In the same skillet, add another tablespoon of oil if needed. Place one tortilla in the skillet, sprinkle half the shredded cheddar cheese, followed by cooked chicken, sliced jalapeños, chopped tomato, and coriander leaves. Top with another layer of cheese and a second tortilla.
  4. 4. Cook the quesadilla for 2-3 minutes on one side until golden and crisp, then carefully flip and cook for another 2-3 minutes on the other side. Repeat for the remaining tortillas and filling.
  5. 5. Remove the quesadillas from the skillet and let them cool slightly. Cut each quesadilla into wedges and serve with lime wedges on the side for an extra zesty kick.
