- 1 kg Bell Peppers
- 1 piece Yellow Bell Pepper
- 500 g Tomato - Hybrid
- 500 g Black Beans

- 250 ml Lemon Juice Concentrate
- 30 g Smoked Paprika Powder
- 50 g Cumin Powder
- 20 g Turmeric Powder
- 50 g Asafoetida Powder
- 100 g Salt
Instructions
- 1. Heat olive oil in a pan over medium heat. Add asafoetida, smoked paprika, cumin powder, turmeric powder, and a pinch of salt. Stir for 30 seconds to release the spices' aroma.
- 2. Add the shredded jackfruit to the pan and cook for 5-7 minutes, stirring occasionally, until it softens and absorbs the spices.
- 3. Toss in the sliced green, red, and yellow bell peppers along with the chopped tomato. Cook for another 5-7 minutes until the vegetables are tender but still slightly crisp.
- 4. Stir in the cooked black beans and lime juice, mixing well to combine all the flavors. Adjust salt if needed and cook for 2 more minutes.
