  • 500 g Onion
  • 250 g Carrot
  • 2 pcs Zucchini
  • 50 g White Sesame Seeds
  • 1 pc (approx. 500 g to 800 g) Cabbage
  • - Fresh Tofu
  • 100 g Garlic
  • loose Ginger
  • 1 l Refined Soyabean Oil
  • 90 g Dark Soy Sauce
  • 200 g Table Salt
  • 190 ml White Cooking Vinegar
  • 500 g Wheat Flour / Maida

Instructions

  1. 1. Prepare the dough by mixing 2 cups of all-purpose flour with 1/2 teaspoon of salt in a large bowl. Gradually add 3/4 cup of water, kneading until a smooth dough forms. Cover with a damp cloth and let it rest for 30 minutes.
  2. 2. For the filling, finely chop 1 cup of cabbage, 1/2 cup of carrots, 1/2 cup of zucchini, and 1/4 cup of green onions. Sauté the vegetables in 1 tablespoon of vegetable oil over medium heat until softened, about 5 minutes. Season with 1 teaspoon of soy sauce, 1/2 teaspoon of sesame oil, and a pinch of salt and pepper. Let the mixture cool.
  3. 3. Roll out the dough on a floured surface to about 1/8 inch thickness. Cut into 3-inch circles using a cookie cutter or a glass.
  4. 4. Place a small amount of the vegetable filling in the center of each dough circle. Fold the dough over the filling to create a half-moon shape, pinching the edges to seal. You can pleat the edges for a traditional look.
  5. 5. Bring a large pot of water to a boil. Add the mandu in batches, ensuring they are not overcrowded. Boil for about 3-4 minutes or until they float to the surface. Remove with a slotted spoon and drain.
  6. 6. For a crispy texture, heat 2 tablespoons of vegetable oil in a pan over medium heat. Pan-fry the boiled mandu until golden brown on both sides, about 2-3 minutes per side.
  7. 7. Serve hot with a dipping sauce made from 2 tablespoons of soy sauce, 1 tablespoon of vinegar, and a sprinkle of sesame seeds.
