Spiced Cajun Dirty Rice with Pecans recipe

Ingredients

  • 1 pack (1 kg) 921 Everyday Long Grain Rice
  • 100 g x 2 Milky Mist Butter Chiplet Pack
  • 200 g Sambar Onion Peeled (Sambar Kanda)
  • 250 g Organically Grown Green Capsicum
  • 100 g Celery
  • 1 pack (250 g) Relish Chicken Gizzard
  • 500 g Delichic Frozen Chicken Liver
  • 100 g Garlic - Single Clove
  • 10 g Fresh Thyme
  • 75 Nos Oregano Sachet
  • 200 g Delichic Chicken Broth
  • 250 ml Dabur Hommade Lemon Juice (Bottle)
  • 100 g Fruitri Premium Pecan Nuts
  • 500G Limgane Red Pepper Powder, Gochugaru For Seasoning 임가네 고춧가루 조미용 500G
  • 1 kg Tata Plus Iron Health, Double Fortified Salt
  • 1 pack (100 g) Tata Sampann Pure Black Pepper Powder
  • 1 pc (52 g) On1Y Paprika Powder
  • 50G Ottogi Mustard Powder 오뚜기 겨자분 50G
  • 100 g Jk Jeera Powder / Cumin Powder

Instructions

  1. 1. Rinse 3/4 cup of rice under cold water and set aside.
  2. 2. In a large pot, melt 1/2 stick of butter over medium heat. Add 1/2 cup diced onion, 1/2 cup diced green pepper, and 1/2 cup diced celery. Sauté until softened, about 5 minutes.
  3. 3. Add 1/2 lb chopped chicken gizzards and 1/3 lb chopped chicken liver to the pot. Cook until the meats are browned and fully cooked, about 8-10 minutes.
  4. 4. Stir in 2 tsp minced garlic, 1 tsp ground red pepper, 1 1/2 tsp salt, 1 tsp black pepper, 1 1/2 tsp paprika, 1 tsp dry mustard, 1 tsp ground cumin, 1/2 tsp thyme, and 1/2 tsp oregano. Cook for 2 minutes to toast the spices.
  5. 5. Add the rinsed rice to the pot and stir to coat it in the spices and meat mixture.
  6. 6. Pour in 2 cups of chicken broth and add 2 bay leaves. Bring the mixture to a boil, then reduce the heat to low, cover, and simmer for 20 minutes or until the rice is tender and the liquid is absorbed.
  7. 7. While the rice cooks, toast 1/4 cup of chopped pecans in a dry skillet over medium heat for 2-3 minutes until fragrant. Set aside.
  8. 8. Once the rice is cooked, remove the bay leaves and fluff the rice with a fork. Stir in 1 tbsp lemon juice and the toasted pecans.
  9. 9. Serve the Cajun Dirty Rice hot, garnished with additional pecans if desired.
