Ingredients

  • 250 g Carrot
  • 500 g Capsicum Green
  • 90 g Dark Soy Sauce
  • 200 g Table Salt
  • 500 g Sugar
  • - Red Chilli Powder
  • 500 Ml Champion Oil

Instructions

  1. 1. Soak 200g of rice cakes in warm water for 30 minutes to soften them.
  2. 2. In a pan, heat 1 tbsp of oil and sauté 1 finely chopped onion until translucent.
  3. 3. Add 2 minced garlic cloves and sauté for another minute.
  4. 4. Add 2 cups of water, 2 tbsp of soy sauce, 1 tbsp of sugar, and 1 tsp of red chili powder to the pan. Mix well.
  5. 5. Drain the soaked rice cakes and add them to the pan. Stir to coat them evenly with the sauce.
  6. 6. Cover the pan and let it simmer on medium heat for 10 minutes, stirring occasionally.
  7. 7. Add 1 cup of sliced carrots and 1 cup of sliced capsicum. Mix well and cook for another 5 minutes.
  8. 8. Check the seasoning and adjust with salt if needed.
  9. 9. Garnish with chopped spring onions and serve hot.
